Today my parents and I arrived at an RV campground where we’ll be staying for the next two nights.  Unfortunately, the internet connection here is sub-par, so uploading pictures takes FOREVER.  Actually, the one pic I tried to upload never actually fully uploaded, so I gave up.

Anyway, after we set up shop at the RV resort, I had a slice of pumpkin bread before we headed to a holiday party hosted by my parents’ friends.  I snacked on tons of delicious food, chatted with some people, and played 5 intense games of cornhole.  After we got back to the camper, my mom and I went for a little walk to check out the place.

Ok, so I know this is not the most exciting of posts (and tomorrow won’t be either), but here goes my list:

  • slice of pumpkin bread
  • party meal –> string beans, broccoli, corn casserole
  • party snacks –> cheese and crackers, spinach dip and crackers, mixed nuts
  • party dessert –> 3 chocolate covered pretzels, pumpkin cake with cream cheese frosting, coconut m&m’s

Lots of indulgent eating, and more to come tomorrow, but I’m really enjoying myself!  I’m up two pounds from when I first came home for holiday vacation, so I hope it doesn’t go up from there.  I’ll weigh myself again probably on…Wednesday morning hehe.  G’nite!

I finally had the courage to step on the scale today!!!  Not too shabby, I must say.  As for today, I lazed around, played games, and watched “Brave” with my nieces.  It was a relaxing day.  I had my banana + peanut butter combo…

… and later I munched on some Publix spinach dip with carrots and veggie straws.  Yum!  Veggie straws are so so good and pretty low-cal.  You can have 39 of those puppies for just 130 cals–not too shabby.

I finally hit the road around 3pm for a long bike ride.  The weather was beautiful!  Tonight we made plans to go out to eat for dinner with one of my dad’s friends from way back and his wife at their vacation home near a beach here.  So, I didn’t want to eat too much to spoil our fancy dinner later.  But, the snacks I had earlier weren’t holding me over, so I sliced up some of a Pistachio mini loaf of bread that my mom had leftover from earlier this week.  It. was. delish.  I had it with a Diet Cherry Coke.  Been drinking way too many of these this week!

We had some pre-dinner snacks (cheese and crackers) and then bread and butter at the restaurant, so for dinner I just had a light salad.

We went for the delicious and light creme brulee.  Soooo good!  Overall, it was a great evening filled with delicious food!  G’nite all!  Oh, the official lists are below.

Workout:  5-minute warm-up jog + 50 minute bike ride

I started the day NOT with stepping on the scale, but with my workout.  Then I ate my fave–banana + peanut butter mix.  We took my nieces to lunch at Chick-fil-A for lunch and some playground fun.  I didn’t eat any chicken, so right when we got home I had some leftover taco (black bean) salad.

20121228_saladAfter playing “Operation” with my nieces and hanging out for a bit, we ate an early dinner.  I had some leftover spinach lasagna from Christmas day.

20121228_lasagna(I just had the two top pieces).  Then we took my sister and I took our nieces to an elementary school roller skating night.  They had such a good time!  We had fun chasing them around, too.  On the way home, of course we had to go for ice cream!  That’s two nights in a row of evening ice cream runs.  What can I say, it’s my vacation!  I went for the peanut butter fudge flavor–delish.

Workout:  short bike ride w/my niece + mini golfing (300ish cals burned?)

I did NOT step on the scale again today because I still feel like I won’t like what I see!  I’m going to give it a couple more days to try to turn around my holiday overindulgence.  I think it’s going to take some time (maybe a couple weeks) to get back to the 129 range, though…I can feel it in my waist!

But, back to the food.  I started the day with some vegetable soup.

20121227_soupThen we did a little mini golfing with the family.  It was a beautiful day, and we really had fun!  We got back home and just hung out for a few hours.  I had a little banana and peanut butter snack.

For dinner we had a taco night! I went for a taco salad.  No meat, of course, but plenty of black beans!

After dinner my mom and I took my nieces for a car ride to look at Christmas lights (just a few days late, hehe).  We made some hot chocolate for the ride.

And on the way home from our ride, we picked up some Dairy Queen–yum!  I had my standard vanilla soft serve with rainbow sprinkles.   Here’s the list:

Happy day-after-all-that-crazy-amount-of-food day!  I’m happy I decided not to step on the scale this morning.  I still felt pretty bloated, so I need some time to get right again.

My sister and I decided to take my nieces to an amusement park that they have annual passes to, woo hoo!  We had a crazy, but really fun day.  We ran into some major traffic and rain that set us back a bit, but we rallied and still managed to enjoy ourselves and make some lasting memories together.  The first half of the day I had a peanut butter sandwich and lots of snacks, and then we hit up CiCi’s Pizza before heading home for the day.

Holiday edition of the food i 8!

First of all, today was an AMAZING day filled with my joyful nieces, loving family, lots of giving, many laughs, a few temper tantrums, delicious food, good conversation, and LOVE!  But I have to say:  Phew…I am officially in food coma mode!  As I mentioned yesterday, there was no calorie-counting today.  I am super careful and good with my food choices most of the time, so I wanted to take some time to let myself indulge in the foods that I love most over the holidays.  Today I did just that!  Starting with some post-present-opening monkey bread.

Yes, that is my brother with his crazy tattoos in the picture.  It’s his “debut” on my blog, haha.  I actually told him over the holidays that I have this blog, and he showed ZERO interest, so now I refuse to tell him anything more about it!  Ah, sibling love.  Alright, so in between the monkey bread and the desserts (pistachio/jelly/cannoli roll and cannolis), I of course stuffed my face with many more delectable items, so let’s just get straight to it–the food i 8 today, holiday edition!

  • Breakfast:  monkey bread
  • Appetizers:  carrots + guac, celery + peanut butter, veggie stromboli bread (thanks for making it veggie, dad!), cheese + crackers, spinach dip + bread, tomato + mozzarella
  • Dinner:  1/2 a sweet potato, green bean casserole, a buttered roll
  • Dessert:  (as if I didn’t go crazy enough on the apps, here’s where I went a little beyond crazy!)  1/2 a slice of the cannoli cake, a cannoli, rice krispie treat, cupcake, AND Italian honey balls

Stick a fork in me, I’M DONE!!!  Happy holidays everyone!

oh, and PS, I am cleaning up my act over the next few days and will step back on the scale on either Friday or Saturday mornings.  I DO NOT want to see what the scale has to say tomorrow morning, hehe.  I’ll save myself the guilt and give my body some time to recover.

Today was a very Merry Christmas Eve for us!  It started with a nice, hour-long bike ride with my husband to offset some of the eating from the past few days and to prepare for tonight.  Then for lunch I had some leftover salad from last night with a buttered onion roll on the side.

Then my entire family went over to my cousin’s house for a Christmas Eve feast!  Sadly, I am totally slacking on the food pictures, so it all went straight to my belly without any photo evidence.  I went to town on lots of stuff, but I might as well just tell you all about it in the official list of the food i 8 today (cals below):

  • Publix onion roll + butter
  • 2 chocolate Hershey’s bells
  • piece of eggplant parmigiana

Now for the best food yet tomorrow!!!  No calorie-counting for me tomorrow, but I will stick to posting all the food i eat, which will hopefully slow me down to some degree.  So excited for family fun time tomorrow!

I’ve been pretty “free” with my food choices lately, and the scale is reflecting that!  I started out great today with a little salad topped with one slice of fried eggplant:

And then I had one cookie, and then a bite of another, and another, and then it was dinner time!

I know I will not be happy with what the scale says tomorrow, but I have to remember to just try my best to eat mindfully and get right back on track after the holidays!  It’s the most wonderful time of the year–there’s bound to be some weight gain and indulgence!

Then we had some fun with my nieces!  We went to the farmer’s market, played games outside, went on a long bike ride, baked Christmas cookies, and had a Taylor Swift dance party hehe.

And now I have to run to get ready for my high school friends coming over before we go out and paint the town!  I’ll probably have a few drinks and maybe some snacks, but I also plan to dance the night away, so hopefully it will all cancel out.  Here’s all the food i 8 today so far, cals below.  Yay for family time!

Today was a busy one!  It was my last day in town before going away for TWO WEEKS.  I’ll be at my parents’ for a little over a week, and then I’m headed to San Diego for a conference, so I had a lot of running around to do before we hit the road to drive to my parents.  Everything started out great:

And then we got Chipotle later in the evening.

And then I went to a party at my cousins’ house and…basically…all hell broke loose!  Haha, I’ll spare you the details, and just sum it all up in the list of the food i 8 today below:

  • 6″ veggie subway sub + cookie
  • Chipotle veggie salad
  • 2 glasses of champagne, most of a Bud Light, and 3 shots concocted by my sister, the ex-bartender
  • Party food:  white rice + peppers and onions, slice of bread + butter, slice of cake, 2 mini cannolis, wheat thin crackers
  • Back at my parents:  WAY too many cookies to keep track of!

As with most nights when I start drinking, I ended up consuming far too many calories by the end of the night.  I feel full and gross right now!  I hope I can get back on track tomorrow, but I’ll be going out AGAIN with high school friends from back home, so who knows what the night will entail!  The scale won’t be moving in the right direction, but I’ll sure be having fun!  🙂
