The throat seems to be taking a turn for the better, woohoo!  Still not 100, or even 90%, but I’m definitely feeling less intense pain than yesterday.  I started off today with some good ol’ veggies and hummus.

Next, I delved into some ice cream for the throat! (or because it’s ice cream, and it tastes good)  😉  Then I went to campus, knocked some things off my to-do list, taught, and came home looking forward to another souffle!

Yum!  I’m a fan of this one, too!  I’d have to say I like the pizza one the best, then this southwestern one, then the butternut squash.  All three are delish, though!

Next, a celebration was in order this evening.  Two of my girlfriends just accepted offers to become faculty members at other universities!  I’m so happy for them.  So, we went to the fanciest, most glamorous…24-hr diner we could find and went all out, true grad student style at…IHOP!

20121205_ihopohhh yeah, I was all over this plate from their “simple & fit” menu…harvest grain blueberry pancakes with egg substitutes, yum yum!  And oh no, we couldn’t stop there…we finished the night with MORE ice cream at Dairy Queen!

Alright, this about sums it up for today:

  • broccoli + hummus
  • Publix ice cream
  • Garden Lites southwestern souffle
  • IHOP –> blueberry pancakes + egg substitutes (the perfect combo of sweet and savory)
  • DQ –> kid size soft serve ice cream with rainbow sprinkles
  • some scoops chips + spinach dip (leftover from last night’s party)
