Today I woke up with an appetite so I snacked on some cucumber slices and hummus before hitting the gym.

After my workout, I downed a delicious Sun Warrior protein smoothie.

Then I headed to campus to teach.  Afterward, I hit up Subway for an on-the-go snack for my drive out of town.

Dinner tonight was hibachi at a Japanese Steakhouse!!!  (one of my faves)  I only ate about half my tofu + vegetable entree, since we hit up Chili’s before dinner for 2-4-1 drinks and chips & salsa.

As a side note…I have a lot of family that lives nearby (anywhere from 2.5 to 5 hours driving distance).  I don’t have a lot of family in the city I live.  That being said, I make a lot of weekend trips to hang with family and friends nearby.  I find myself easily staying on track food-wise during the week when I’m home and slipping up when I’m with friends and family on weekends.  So, this weekend I am going to pay more attention to the food I’m inhaling.  I need to be more mindful on the weekends.  Eat when I’m hungry.  Stop when I’m full.  Here’s to a healthy weekend!

Food i 8 today:

  • 1/3 cucumber + 1.5 TBSP Sabra hummus
  • protein shake –> 1 C spinach, 1 C almond milk, 1 TBSP sunbutter, 1 scoop Sun Warrior chocolate protein powder, 1/2 banana
  • 6″ veggie sub from Subway
  • 2 glasses of red house wine
  • chips and salsa
  • 1/2 portion of vegetable and tofu hibachi
  • some nibbles of brownie brittle (whoopsie…SO GOOD!!!)

too busy for food?

So this morning while I was at the gym I got an email from one of my professors that a group of us should meet this morning about a paper we’re all working on before he goes out of town.  Of course, I leave my phone in my car, so by the time I received the text, I had to make a mad dash home to shower and get to campus.  Then I had to teach right after the meeting.  Then I had a conference call right after that.  I thought the call would be short and I could maybe run somewhere for food then, but it ran right into the time when I was scheduled to give a student a make-up exam.  So…when 4pm rolled around I still hadn’t eaten ANYthing!

This is very strange for me.  To be too busy for FOOD?  I laugh when I hear people say things like, “Oh I just forgot to eat lunch today!”  I never forget about food, but today was one of those days where I literally just didn’t stop until about 4pm.  So, I had a Sunbelt Oats and Honey bar to hold me over til dinner.

I met up with some friends around 6pm at a place called Newks (a deli kind of place) for dinner.  I got 1/2 a veggie sandwich + a cup of veggie soup.

I was still hungry when I came home, so I whipped up a bowl of oatmeal with some banana and almond butter.

Then I ended the night with 1/4C of trail mix (Women’s Vitality mix) that I picked up from The Fresh Market last week.

And that was about it for me today!

  • Sunbelt oats and honey granola bar
  • 1/2 veggie sandwich + cup of veggie soup
  • 1/3 C old fashioned oats, 1/2 smashed banana, 1-2TBSP of almond butter (with all my extra licks, probably like 2.5)
  • 1/4 cup trail mix

My latest favorite!  I start with a couple cups (roughly) of spinach, then heat and chop up a Lightlife black bean veggie burger, and top it off with a few tablespoons of Publix salsa.  It’s delish!  I’ve started to eat veggie burgers bun-less in general, even when I’m out.  Why? Because I’d rather forego a white bread bun in favor of a little dessert treat later!  A bun doesn’t do much for me, but a cookie sure does.  Balance people!

I’m a little low on cals again today, but I’ve seriously just been following hunger cues.  I stuffed myself silly many days last week, so I think my body is thanking me for taking it easier this week.

  • protein shake –> 1 C spinach, 1 C almond milk, 1 TBSP sunbutter, 1 scoop Sun Warrior chocolate protein powder, 1/2 banana

Whoopsie–forgot to post this last night!  …probably because not much was happenin’ on the eating front.  I wasn’t too hungry all day, and then went to a BBQ dinner with my cousin in the evening.

Today we basically just had the LONG drive back home, and I did a little school work, too.  My eats were not perfect by any means.  But this week I have no major social plans or parties, so I plan to get back on track, follow my hunger cues, and limit sugar/white carbs.  Hope everyone in the US had a great 3-day weekend!

Another long, full, and fun day in Tennessee!  We went hiking, explored some waterfalls, ate at a Chinese buffet, saw Fast and Furious 6, walked around the downtown area, and then got a delicious, home-cooked meal from my sister-in-law.  I’m wiped out, and I didn’t take any pics again, so here’s the list of all i 8 today.  I wasn’t on my best behavior, but I’m not feeling overly stuffed right now, which is progress.

Food i 8 today:

  • Free hoetl breakfast buffet –> bites of my husband’s Belgian waffle; about half of a blueberry muffin
  • Chinese buffet –> plate of veggies (stir-fried with teriyaki sauce), 2 pieces of an avocado sushi roll, 1/2 a dinner roll, bites of this and that dessert
  • Dinner –> veggie burger over a bed of lettuce with ranch dressing, grilled onions and peppers, a few bites of macaroni salad
  • a delightful strawberry cobbler

Today we had a nice, long 8 hour road trip to Tennessee!  Then we hung with my husband’s nephews, played in the back yard, took them to a park, and drove around with them.  Then we watched some TV and finished the night with a Mexican dinner out!  I feel better about my food choices today, and I don’t feel blah for once.  No pics, sorry, but below is the summary.

…the calorie-counting and healthy eating choices have kinda gone out the window.  😦  Between Nashville last weekend, pizza and cake at the going away party this week, then drinking last night, and another trip to Tennessee tomorrow (to visit in-laws there), it just hasn’t been happenin.  Hello life!  I am determined to reign it in this weekend, though.  I end up feeling so blah and ugh when I eat/drink like this.  Ok…onto the badness of my eats today:

We had a lil party for the graduating “seniors” in the PhD program in the business school here, so of course I had to partake in the festivities!  One good thing is they had a vegan pizza pie, so I went for that, which was loaded with veggies, sans cheese.  Lots of leftovers for me to take home, too!
