Scotland-bound!

Welp, I am headed out of the country first thing tomorrow morning for a TEN-DAY trip to Scotland!  I’ll be attending a conference and presenting a paper while over there, and I’m also bringing my husband along and doing a little touring of the country as well.

Unfortunately, I will not have internet access at every hotel along the way, so I’ll JUST have to take lots of foodie pictures while I’m there and report back when I return!  I’m super excited for the adventure.  We’ll be visiting Edinburgh, Glasgow, Perth, and St. Andrews.  We have had ZERO time to plan/prepare for this trip with the house hunting and new job stuff, but it will still be a fun, spontaneous trip.

Alrighty, I’m leaving for the trip at a weight of 132.4.  I decided to weigh-in this morning to have a benchmark for when I get back.  We’ll be doing a ton of walking/exploring, which is good, but I’m sure we’ll also be indulging.  So, we’ll see!  My plan is to get a gym membership when I get back as well, so I can get myself  back on track!

And for dinner we met some of our friends that were passing through town.  We went to a popular downtown burger joint called Graffiti Junktion.  I had a veggie burger patty in a wrap form (no cheese or mayo), with a side of deliciously crispy tater tots.

Friday weigh-in #5

I was at 131.2 Friday morning.  Not too shabby.

Today I went antiquing with my mom and her friend all morning.  It was actually kind of neat to check out all the goodies that were out there!  We ate lunch at a cute sandwich shop while we were out.

From there, my mom and I continued to run errands and shop around for my sister’s upcoming baby shower.  But enough about me, onto the FOOD!

Day #2 on the job, and it was much less crazy than yesterday, thank goodness.

I sipped on my regular protein shake on my commute in, then for lunch around noon I had Publix dip chip carrots + Sabra guacamole, along with a bean salad I made earlier this week.  I forgot to take a picture of it AGAIN, but it’s basically a mix of edamame, black beans, corn, cherry tomatoes, red wine vinegar, and some other stuff. At about 2pm I was hungry for a little somethin’, so I ate one of these adorable little guys:

1st day madness!

Today was my first day of teaching on the new job–it was crazy busy!  But, I still managed to eat. 😉

I started with a protein shake (unpictured), then a healthy garden salad (unpictured), and some carrots and guacamole (unpictured).

Then I actually had a breather and got some celebratory dessert when I got home!

Dinner was a mix of lettuce, black bean burger patty, salsa, and grape tomatoes.  Yum!

Out n about all weekend

Saturday and Sunday were filled with LOTS of errands and of course…eating!  We were furniture window shopping, grabbing a few things to spruce up my work office, had a couple trips to the supermarket, and we met with a mortgage broker somewhere in there.

We went to the Sweet Tomatoes buffet for lunch Saturday, and here’s a peek at just some of the many plates of food I consumed:

Later that night, we hit up happy hour at a local bar where I consumed two Bud Light drafts and 2 potato skins–yum!

And now I’m ready to unwind a bit before I have my FIRST day of teaching (ahem…going over the syllabus) tomorrow–woohoo!

  • Chipotle salad bowl –> lettuce, black beans, fajita veggies, pico de gallo, guacamole
  • VegeFi burger –> quinoa burger patty, lettuce, tomato, pickles, and ketchup on a multigrain bun
  • feeling a little hungry…maybe a bowl of Vanilla gluten-free Chex cereal soon?

Friday weigh-in #4

This morning’s weight:  132.8

My other most recent weigh-ins:  134.2 (8/8), 132 (8/2), 131.8 (7/26), 133 (7/19),  134.4 (7/13)

Seeing this pattern leads me to believe that really, my weight is around 135.  With a “happy weight” of 130 and a goal weight of 125, I think I have 5 pounds to lose!  🙂

The good thing is that 4 weeks of rest for my broken pinky toe ended this week.  I’m going to TRY to get back in the gym.  I really hope the pinky toe is all good now!
