  • protein shake –> 1 C spinach, 3/4 C almond milk, 1 scoop Sun Warrior protein powder, 1/2 banana, ice
  • Publix dip chip carrots + cucumber slices + Sabra guacamole
  • 1 serving of the healthy garden salad
  • 1 mini apple Larabar
  • side caesar salad
  • 1/2 of a personal pineapple pizza
  • 5 gluten-free ginger snap cookies

Today I had another day of faculty orientation.  I skipped out on breakfast, but had half of a veggie sandwich and a chocolate chip cookie for lunch.

I was SO hungry on my drive home, so I whipped out a quick snack.

I got a giftcard to Chilis/On the Border/Maggiano’s/Macaroni Grill, from my sister for my graduation, and we opted for one of the Italian joints.  We started off with their delicious bread loaf.  I also enjoyed a nice glass of Malbec wine.

For my “main meal”, I had a Caesar salad–no croutons, dressing on the side.  It was pretty good!  Mmmmm but that bread loaf was so so good!

Food i 8 today:

  • 1/2 veggie sandwich + 1 chocolate chip cookie
  • blueberry Lara bar
  • bread loaf + Caesar salad + glass of red wine

Woohoo, today marks ONE MONTH of blogging!  How fitting is it that the date I started blogging is the 8th…and the blog is the food i 8 today!  Perfecto!

Anyway, let’s recap the month.  I started on Monday, October 8th, weighing in at 133.6 pounds.  While I’ve definitely wavered over the past month and have seen the scale back up at 133, I am happy with the number on the scale this morning.  I wouldn’t say I’ve exactly “lost 3.8 pounds” (133.6-129.8) this past month, since honestly, I weighed in at 132.4 on Monday!  I will say this, though.  I started tracking my daily weight in an excel file back in March of this year, and I looked back over the weigh-ins today and noticed that EACH month since March I’ve had at least one day over 135 pounds.  Since I started this blog one month ago, I haven’t had a single day over 135 pounds.  And that my friends, is what I call progress!

When I’m doing really well with my food choices, the scale usually settles on 129.8 and then when I go crazy over the weekend, I get away from that number.  My goal for this next month is to try to see more days at 129.8 (or lower!) and less Mondays at 132 or 133 pounds.

Ok–so what went on today??  I did a combo of treadmill / elliptical / stair machine this morning (400 cals burned) and then a step class and some brisk treadmill-walking in the evening (510 cals burned).  As for the food i 8 today, I started the first half of my day much like yesterday, with my green juices!  Later in the day, after my step class and a Walmart run with my girlfriends for decorations for a baby shower we’re hosting on Sunday, we hit up Panera Bread for dinner–yum!  Here’s what I got to eat:  Per usual, I chose the U-Pick-Two combo with 1/2 a Mediterranean Veggie sandwich and 1/2 a Caesar salad (I picked out the croutons).  The meal also comes with a slice of French bread, or chips, or an apple.  I opted for the apple, but wasn’t in the mood for it with my meal, so I saved it for another time.  The sandwich was SO GOOD!  Here’s a better shot of the insides:

To quote, it has “Zesty Peppadew™ piquant peppers, feta cheese, cucumbers, lettuce, tomatoes, onions and cilantro Jalapeño hummus on Tomato Basil bread.”  Looks good, right??  Alright, here’s all the food i 8 today (below) and how the day ended up calorie-wise (also below).  I’m looking forward to the upcoming long weekend!  Thank you, veterans, for all that you do and have done!
