Out n about all weekend

Saturday and Sunday were filled with LOTS of errands and of course…eating!  We were furniture window shopping, grabbing a few things to spruce up my work office, had a couple trips to the supermarket, and we met with a mortgage broker somewhere in there.

We went to the Sweet Tomatoes buffet for lunch Saturday, and here’s a peek at just some of the many plates of food I consumed:

Later that night, we hit up happy hour at a local bar where I consumed two Bud Light drafts and 2 potato skins–yum!

Today we started out with lunch at Chipotle.



And dinner at Burger Fi.



And now I’m ready to unwind a bit before I have my FIRST day of teaching (ahem…going over the syllabus) tomorrow–woohoo!

Food i 8 today;

  • Chipotle salad bowl –> lettuce, black beans, fajita veggies, pico de gallo, guacamole
  • VegeFi burger –> quinoa burger patty, lettuce, tomato, pickles, and ketchup on a multigrain bun
  • feeling a little hungry…maybe a bowl of Vanilla gluten-free Chex cereal soon?

This morning I started out with some…guacamole?!  Yep, sliced cucumber and guac.



For lunch, I paired some of my mom’s roasted vegetables…



…with a bowl of oatmeal/banana/peanut butter.

For dessert, my husband actually saved me a cookie he received from a Double Tree hotel while at work.  Supposedly, the hotel is known for their “amaaaazing” cookies.  I warmed it up in the mic for about 10 seconds, and mmmm it was delish!

  • 1/2 cucumber + 1/3 Sabra classic guacamole container

Hello again!  I can’t seem to wipe the smile off my face from officially completing all the steps necessary to get my PhD yesterday–wooohooooo!

Anyway, tomorrow I am headed home to go on a 2-week road trip with my family in my parents’ RV up the east coast to visit family in New Jersey.  I can’t wait to hit the road!

Now, as for the blog.  Let me get a few things off my chest…

(1) I started the blog to try to keep myself accountable and to stay on track with eating “right”/healthily.  Welp, I’ve kind of fallen off the wagon.  While I haven’t gained some ridiculous amount of weight or anything, I have clearly been having days filled with unhealthy food choices (i.e., beer, pizza, chips, dessert…).  So, I’ve veered off course in my daily healthy eating habits (there were some good days mixed in there).

(2) Life has been filled with fun activities lately!  I’m moving this month as well and starting a new tenure-track assistant professor position in August, teaching at a big ol’ university.  While these have been exciting times, they’ve also been very much non-structured.  I’ve had so many going away events, dinners, lunches, drink-fests, BBQs.  My kitchen stuff has been packed up for weeks, so I’ve eaten out every meal.  I’ve been stressed with packing and getting ready to defend my dissertation.  I’ve been teaching every. single. day.  My foot injury has reduced the amount of intense cardio I can handle.   In sum, this has been the perfect environment for me to to eat like crap.  I’ve been excited about all the fun events and my life changes, but discouraged with how it has impacted my eating.

(3) That all being said, I will be out of town (and in an RV mostly) for the next couple of weeks, so blogging and weighing-in daily just isn’t realistic.  Once life settles down, I want to get back into a routine and make sure I clean up my eating.

Until then, I’ll be livin’ it up!!!!!  I want to enjoy this time while it’s here.  No scales or calorie counting for a little while.  I want to eat mindfully and indulge here and there.  I’ll be back at some point over the next month–promise!

I WILL hit that 125 goal eventually.  Just maybe not for a few more months. 😉

I started today with an invigorating spin class.  Afterward, I came home, showered, wolfed down a Lara Bar, then headed to campus.


After teaching and a little bit of work I had a hankerin’ for some Chipotle.   I LOVE their salad bowl!



After a few more hours of work on campus, dinner was next on the agenda.  I stopped at Earth Fare (local health food supermarket) to see what their deli had to offer.   Here’s what I went with:

I felt each dish was “eh”.  Maybe the seasoning on the tofu made it a little more desirable than the other two items I purchased.  Anyway, the food that REALLY stole the show was this delicious sweet potato caramelized onion cake!



I know it sounds a little weird, but boy was it tasty!  It was almost like a dessert, which means it probably wasn’t all that healthy, but I would definitely buy one of these again.

Last but not least, I had a few bites of some creamy almond butter.  That wraps up today’s eats!

Today I woke up, did some work, then headed out to our fave Orlando BBQ joint (4 Rivers Smokehouse) for lunch with the hubs!


I went with my usual–a side of fire roasted corn and a side of bread pudding.  SO DARN GOOD!  I ate only half at the restaurant since we ate around 11am, and I wasn’t particularly hungry yet.  I ate the other half later in the afternoon.

On the way home from lunch, I stopped by my favorite Orlando spot for vegan and gluten-free desserts–Drunken Monkey.  I’ve been addicted to their Anzac biscuits for a while, but I decided I wanted to switch it up and try something new.  I could NOT decide on just one item, so naturally I went with three.


(1) a vegan and gluten-free chocolate chip cookie bar, (2) a small gluten-free double chocolate cookie, and (3) a small gluten-free chocolate chip cookie.

After I ate the rest of my BBQ sides this afternoon, I decided to do a little taste test and commit myself to NOT polishing off all three, especially if they didn’t taste good.  The result:  the cookies were not so great, so I trashed both of them.  The cookie bar was delish, so I saved the rest for my after-dinner snack.  Perfecto!

Dinner was a Chipotle salad.


I really didn’t need to eat all of this, but I did!  My belly is FULL and happy now!

Workout: upper body workout

I started today with the upper body pyramid workout that I did on Monday.  Good stuff–I was feeling the burn!

For lunch, I met up with my husband and some of his friends at Jason’s Deli.  They have quite a few vegetarian options–woohoo!  I went with a spinach veggie wrap (an organic wheat wrap with mushrooms, organic spinach, asiago, guac, pico, and salsa).  It came with a side of steamed veggies (broccoli, zucchini, and organic carrots).  It was definitely filling, healthy, and good, but it was lacking flavor to some extent.  I guess that’s what I get for ordering veggies with a side of veggies!  🙂

Anyway, the real kicker was that, unbeknownst to me or the hubs, Jason’s Deli has a soft serve machine that is FREE for all customers!  I NEVER knew this.  I thought our friends were playing a joke on us at first, but low and behold, ’tis true.  Jason’s Deli gives away free ice cream.  I went with a small cone, filled with a swirl of chocolate and vanilla ice cream.  Perfecto!

A few hours later, I munched on some vegetable chips to hold me over ’til dinner.


Dinner was one of my faves–Chipotle!  I went with this jumbo veggie and black bean salad.



We had to stop at Publix on the way home, so of course I picked up a little something sweet.



They call this a “derby” cake, but it’s basically two layers of chocolate cake with a fruit spread in between with peaches, bananas, and strawberries, topped with buttercream frosting.  Yum!

I’ve been incorporating bananas into the mix quite a bit lately.  After my morning workout, I had my 1/2 banana, nut butter, and oatmeal combo.


And then a little while later I had a banana-themed Lara bar.


For lunch I steered clear of bananas and had a delicious Chipotle salad!


I’m kind of excited, they FINALLY have a nutrition calculator on the Chipotle website.  Gracias!


Tonight we went out with some family.  The food options were pretty much typical bar food, so it was tough to try to make a “healthful” decision.  I ended up having a Mich Ultra draft, splitting a small cheese and veggie quesadilla appetizer with my husband, and then splitting a small mushroom pizza with my husband.  Not the best way to end my day, but hey, perfection is tough.  😉

Today was a busy one!  It was my last day in town before going away for TWO WEEKS.  I’ll be at my parents’ for a little over a week, and then I’m headed to San Diego for a conference, so I had a lot of running around to do before we hit the road to drive to my parents.  Everything started out great:

And then we got Chipotle later in the evening.


And then I went to a party at my cousins’ house and…basically…all hell broke loose!  Haha, I’ll spare you the details, and just sum it all up in the list of the food i 8 today below:

  • 6″ veggie subway sub + cookie
  • Chipotle veggie salad
  • 2 glasses of champagne, most of a Bud Light, and 3 shots concocted by my sister, the ex-bartender
  • Party food:  white rice + peppers and onions, slice of bread + butter, slice of cake, 2 mini cannolis, wheat thin crackers
  • Back at my parents:  WAY too many cookies to keep track of!

As with most nights when I start drinking, I ended up consuming far too many calories by the end of the night.  I feel full and gross right now!  I hope I can get back on track tomorrow, but I’ll be going out AGAIN with high school friends from back home, so who knows what the night will entail!  The scale won’t be moving in the right direction, but I’ll sure be having fun!  🙂

This week I’m back at my family’s place, so I checked out a cardio class at a nearby gym.  It was pretty butt-kickin’!  My post-workout snack was a banana with some almond butter.


The rest of the afternoon consisted of some work and snacking, starting with old faithful, carrots and hummus.


aaaaaaand I found some more Garden Lite souffle varieties at the Publix here, woohoo!  They’re still buy one-get one free, too, which never hurts.  I love these little guys–low-cal, tasty, and 2 servings of veggies.  Today I tried out the broccoli one.


Just like the other varieties, this one was pretty tasty, too!  Dinner was a delicious salad from Chipotle.  They really hooked it up with the guacamole!

This morning I went to a local YMCA for a free day guest pass.  Fortunately, the lady at the front desk was so busy that she started to ask for my drivers license and then whispered, “Just go ahead–I don’t really have time to do this right now.”  Score!  I was a couple minutes late, but decided to jump in on a “conditioning” class that involved lots of burpees, mountain climbers, jumping jacks with hand weights, and planks (415 cals burned).  I really enjoyed it!  Then I canceled out all that hard work with a BBQ lunch!

Even as a vegetarian, I actually love going to BBQ joints because they always have fun side options, so I usually just order a side sampler.  Today I went with the roasted corn, mashed sweet potatoes, and a big ol’ hunk of cornbread. I decided to just eat HALF of each thing I ordered.  Oh, and maybe I stole a couple (10) fries off my husband’s plate!  After lunch I went on a long, brisk walk around the neighborhood (200 more cals burned) and then did some work.

For dinner, I had a major Chipotle craving (OBSESSED w/their guac!), so we stopped in at a nearby Chipotle and got our food to-go so we could get back to the house to continue watching Breaking Bad on Netflix (kind of obsessed with this show right now, too).  Welp, when we got back to the house, my husband noticed the bag was all wet at the bottom, meaning my salad likely leaked.  When he tried to reach in to pull out our food, the bottom split open and my salad opened up and splattered all over the sidewalk!  I’m guessing I still ended up with over half of the meal, but it was equally funny and annoying.

Overall, I satisfied my Chipotle craving, even though the bag rip was not fun!  Ok, here’s the list of all the food i 8 today (calorie “guesses” pasted below):

  • 1/2 order of fire roasted corn
  • 1/2 order of mashed sweet potatoes
  • 1/2 piece of cornbread
  • 10 fries + ketchup
  • leftover black bean burger (patty only, tossed the bread) from last night’s vegan restaurant
  • leftover eggplant parmigiana (delish–thanks MOM!)
  • Chipotle salad (lettuce, black beans, pico, verde salsa, guacamole)
  • a couple of pre-packaged cookies that were laying around the house

One more day of being good until the FEAST that is Thanksgiving!  Woohoo–get excited!!!
