1st day madness!

Today was my first day of teaching on the new job–it was crazy busy!  But, I still managed to eat. 😉

I started with a protein shake (unpictured), then a healthy garden salad (unpictured), and some carrots and guacamole (unpictured).

Then I actually had a breather and got some celebratory dessert when I got home!





It’s an ANZAC cookie/biscuit from my fave local vegan bakery (The Drunken Monkey)

Dinner was a mix of lettuce, black bean burger patty, salsa, and grape tomatoes.  Yum!




Later I snacked on some lightly salted Snapea Crisps that were pretty tasty, too!

Friday weigh-in #4

This morning’s weight:  132.8

My other most recent weigh-ins:  134.2 (8/8), 132 (8/2), 131.8 (7/26), 133 (7/19),  134.4 (7/13)

Seeing this pattern leads me to believe that really, my weight is around 135.  With a “happy weight” of 130 and a goal weight of 125, I think I have 5 pounds to lose!  🙂

The good thing is that 4 weeks of rest for my broken pinky toe ended this week.  I’m going to TRY to get back in the gym.  I really hope the pinky toe is all good now!

Aaaaalrighty, onto the food!  I started today with a shake…

And tonight we stayed in, watched some TV, and ate pizza from Flippers!

This morning I started out with some…guacamole?!  Yep, sliced cucumber and guac.



For lunch, I paired some of my mom’s roasted vegetables…



…with a bowl of oatmeal/banana/peanut butter.

Dinner included another dose of guacamole, this time in a Chipotle salad!



For dessert, my husband actually saved me a cookie he received from a Double Tree hotel while at work.  Supposedly, the hotel is known for their “amaaaazing” cookies.  I warmed it up in the mic for about 10 seconds, and mmmm it was delish!

Today was a big day!  4 years of hard work culminated.  I successfully defended my dissertation–woohoo!  Too excited to worry about food pics today!  🙂  Not my healthiest day of eats–I need a huge salad tomorrow or something!

…at how much I ate this weekend!  Uggggh today was bad, too.  I’m in this “good weekdays/bad weekend” cycle.  Must. STOP!  Alright, following hunger cues tomorrow for sure.  I hate feeling so gross on Sunday nights!

So lately I’ve been eating A LOT at night.  More than I usually do.  For example, last night between 5 and 7pm I ate 2 breadsticks, 2 slices of pizza, and a generous portion of ice cream, which was the bulk of my calories for the day.  When I gorge myself like that in the evening, I find that I’m not  hungry in the morning.  I’m actually not hungry for many hours.  So, what I often do when this is the case is just wait for hunger to hit me.  Yes, it may be strange to wait until noon, 1pm, or 2pm to eat my first bite of food for the day, but why should I force myself to eat before then if I’m still full from the food I ate last night?  (Note:  when I have a normal day of eating the day before, my stomach starts growling for food by at least 9am.)  I’m no expert, and I’m not sure if this is healthy/intuitive eating, but it does involve me listening to my body for the right cues.  There’s got to be something “right” about that, right??

On the agenda for me this morning was more research work at the computer!  I got hungry around 1pm and whipped up a smoothie.  I figured if I fall off the wagon later today, at least I STARTED the day with some spinach, banana, healthy fat, and protein!



We went for an early dinner at a local BBQ joint.  I indulged in three of their delicious side items:  sweet potatoes, bread pudding, and fire roasted corn.



I ate half of each side, as well as a few bites of my husband’s crinkle-cut fries.  I LOOOOOVE their bread pudding.  So bad for you, but so so good!

Afterward, the hubs and I hit up a local joint for happy hour.



I couldn’t finish my beer, but I sure had room for a vegan cookie afterward.  🙂

Ok, so I hopped on the scale this morning and was annoyed with the number I saw.  Damn scale!  I know the only person to blame is myself…

Anyway, I had a pizza night with friends scheduled for this evening, so I decided to do a mini half-day cleanse prior to dinner.  I drank TONS of water and had this bottle of kombucha.


I’ve discussed some of the benefits of this drink in a previous post (here).  This one was pretty tasty, too.

The rest of the evening consisted of two slices of pineapple pizza and a Publix M&M’s chocolate chip cookie.


I’m back on the road to Orlando tomorrow!  I’m going to try my best to keep healthy choices in mind.

This morning I drank A LOT of water to try to clean out all that bad food from yesterday!  I started off with my protein shake, a couple spoonfuls of the leftover corn from yesterday, and a couple bites of my leftover cookie before I tossed the rest.

Then I drove down to my parents’ place for the weekend–woohoo!  I’m going to see my niece play in a volleyball tournament tomorrow, and it’s my sister’s birthday tomorrow, too, so we’re having a party at night.

Right when I got to my parents’ I had a little cheese and crackers appetizer with my dad that really filled me up.  So for dinner, I just snacked on some veggies.



But don’t worry, there was plenty of post-dinner taste-testing in the kitchen, as I munched on Easter candy and some baked treats that I whipped up for tomorrow’s celebration!  (ahem…these are not “from scratch” baked goods…let’s just say they’re semi-homemade hehe).

Today I was bad.  I was out with family and just let myself go.  A little too much.  We went out to three restaurants (lunch, snack/happy hour, dinner).

#1:  4 Rivers Smokehouse

I had half a side of some fire roasted corn,



a deeeelicious entire side of bread pudding,



and about 1/2 of this ginormous double chocolate cookie, which I nibbled on throughout the afternoon.



#2:  Wildside BBQ

I was still pretty full from lunch, so when we hit up this place mid-afternoon, I just sipped on some Diet Coke and ate some fried pickles.

#3:  Rocco’s Tacos

This is when I kind of just let the good times roll…

I started with a glass of red sangria.  Then we ordered some chips and salsa.  Then we got some tableside guac made.  (AWESOME!)  Then I had WAY too many chips…I can’t help myself with chips and dips.  Too yummy!  Then I ordered a small salad.  Then I came home and nibbled some more on my chocolate cookie.

And now I feel stuffed to the brim.  Back on track tomorrow…

Workout: 5ish mile bike ride + a 1/2 hour walk

I woke up and went on a bike ride first thing this morning.  It was a beautiful day for a leisurely ride.

Then I took another leisurely ride (in my car) from my parents’ house to Orlando to visit more family.

When I finally got a chance to sit down and eat something, I was pretty hungry and feeling quite “snacky”.  I started with some carrots and guac hummus.


Then I wanted a little something sweet, so I had one of my coconut date rolls…only two more left now!


Then, I spied some vegetable chips that my sister brought home from Seattle this week.  I couldn’t stop eating them–these puppies are good!


It’s a mix of sweet potato, taro, summer squash, carrots, and green beans, if you were wondering.   Then, I must admit, I did eat a few nibbles right out of the TJ’s creamy almond butter jar.  Snack-happy!

So, my breakfast/lunch ended up being a little of this and that.

For dinner, we went to a burger joint in downtown Orlando called Graffiti Junktion.  We weren’t sure if there was a vegetarian option for me, but they ended up having a house-made vegetarian burger patty that I absolutely loved!  I got it served in a wheat wrap with some other burger fixin’s.  On the side, I opted for some tater tots.  I’m not sure when I last had some tots, but they were so good!



Don’t worry, I only had half the sandwich and half the tots…because I had to save room for dessert!  I made my husband drive me to the Drunken Monkey for this vegan cookie treasure:
