I’ve had CRAZY busy days lately…so sorry for my lack of words in my posts!

 

Food i 8 today:

  • protein shake –> 1 C spinach, 3/4 C almond milk, 1 scoop Sun Warrior protein powder, 1/2 banana, ice
  • Publix dip chip carrots + Sabra hummus
  • 1 serving of the healthy garden salad
  • mini Larabar
  • roasted asparagus
  • leftover 1/2 veggie patty wrap

Day #2 on the job, and it was much less crazy than yesterday, thank goodness.

I sipped on my regular protein shake on my commute in, then for lunch around noon I had Publix dip chip carrots + Sabra guacamole, along with a bean salad I made earlier this week.  I forgot to take a picture of it AGAIN, but it’s basically a mix of edamame, black beans, corn, cherry tomatoes, red wine vinegar, and some other stuff. At about 2pm I was hungry for a little somethin’, so I ate one of these adorable little guys:

When I got home, I was in a very “snacky” mood!  This happened:

Qdoba + a happy hour

The crazy days just keep coming!  I didn’t get around to breakfast again (bad BAD), but went to lunch with some colleagues at the student union/food court.  I went with a black bean and veggie salad from Qdoba–add the guac please.  Yum!

In the afternoon, I snacked on a larabar to hold me over til dinner.

I went to an unexpected, fun happy hour around 5pm, and was STARVING by the time I got home.

I snacked on some carrots and hummus and then ate some leftovers (sweet potatoes and corn) from a BBQ outing last weekend.

That’s about it!

  • Qdoba salad (black beans, lettuce, roasted veggie mix, salsa verde, pico de gallo, guacamole)
  • apple pie Larabar
  • draft Miller Lite beer
  • carrots + hummus
  • leftover sweet potatoes and corn

Today I had another day of faculty orientation.  I skipped out on breakfast, but had half of a veggie sandwich and a chocolate chip cookie for lunch.

I was SO hungry on my drive home, so I whipped out a quick snack.

I got a giftcard to Chilis/On the Border/Maggiano’s/Macaroni Grill, from my sister for my graduation, and we opted for one of the Italian joints.  We started off with their delicious bread loaf.  I also enjoyed a nice glass of Malbec wine.

For my “main meal”, I had a Caesar salad–no croutons, dressing on the side.  It was pretty good!  Mmmmm but that bread loaf was so so good!

  • 1/2 veggie sandwich + 1 chocolate chip cookie
  • blueberry Lara bar
  • bread loaf + Caesar salad + glass of red wine

Friday eats

I’ve been maaaajorly slacking in the food photography arena.  Bad blogger!  But, I’m ready to get back on track.  Life should be returning to “normal” fairly soon.  I need to sit down and think about how the blog is going to fit into life with the new, “busier” job of mine!

For now, the list of the food i 8 today will just have to suffice:

  • Qdoba veggie salad –> romaine lettuce, roasted veggies, fajita veggies, pico, salsa verde + coke zero
  • apple pie Larabar
  • 1 banana + 2 TBSP natural peanut butter
  • Bahama Breeze dinner –> 1 Miller Light draft beer, 1/2 a roasted veggie sandwich, side tomato salad
  • Dairy Queen vanilla soft serve cone with sprinkles

I am going to make a better effort to take food photos starting this weekend!

  • Whole Foods hot bar –> (clockwise in pic) one piece of garlic tofu, vegan baked beans, lentils and zucchini, spicy vegan veggies, spinach salad with cranberries and goat cheese, added some chickpeas

  • some of the David’s cookies my mom sent me 🙂
  • happy hour –> 1/2 of a wheat berry beer (yum!) + some tator tots to much on
  • dinner –> 1/2 of a fig + goat grilled cheese sandwich + some truffle fries (holy yum!  the sandwich was omg AMAZING and the fries were just as good)…from “Toasted” in Winter Park, FL–I highly recommend!

I started today with an invigorating spin class.  Afterward, I came home, showered, wolfed down a Lara Bar, then headed to campus.

After teaching and a little bit of work I had a hankerin’ for some Chipotle.   I LOVE their salad bowl!

After a few more hours of work on campus, dinner was next on the agenda.  I stopped at Earth Fare (local health food supermarket) to see what their deli had to offer.   Here’s what I went with:

I felt each dish was “eh”.  Maybe the seasoning on the tofu made it a little more desirable than the other two items I purchased.  Anyway, the food that REALLY stole the show was this delicious sweet potato caramelized onion cake!

I know it sounds a little weird, but boy was it tasty!  It was almost like a dessert, which means it probably wasn’t all that healthy, but I would definitely buy one of these again.

Last but not least, I had a few bites of some creamy almond butter.  That wraps up today’s eats!

  • 0.35 lb. of “live dark green salad” (vegan) –> kale, red pepper, yellow pepper, squash, zucchini, broccoli, cauliflower, tomato, carrot, celery, cider vinegar, sunflower seeds, EVOO, canola oil, agave nectar, salt, hemp seed
  • 0.13 lb. of roasted brussels sprouts with garlic
  • 0.17 lb 0f sweet Korean kim chi marinated tofu
  • sweet potato caramelized onion cake
  • few bites of MaraNatha creamy almond butter

Falafel, hummus, feta, oh my!  I love me some Mediterranean food.  Tonight I hate a veggie plate full of this goodness for dinner with a group of my friends.  I ate half of my meal at the restaurant and the rest a couple hours after I got home.  Delicioso!

Backing up to this morning, I started with a Body Step workout and then drank the rest of my kombucha from yesterday.

And before I knew it, it was time for my Mediterranean feast!

I came home, went for a walk, and then finished my leftovers.

I also followed it up with some spoonfuls of almond butter as dessert.  🙂  Good day of eats!
