And for dinner we met some of our friends that were passing through town.  We went to a popular downtown burger joint called Graffiti Junktion.  I had a veggie burger patty in a wrap form (no cheese or mayo), with a side of deliciously crispy tater tots.

Great day of yummy eats!

Food i 8 today:

  • protein shake –> 1 C spinach, 3/4 C almond milk, 1 scoop Sun Warrior protein powder, 1/2 banana, ice
  • Publix dip chip carrots + Sabra hummus
  • 1 serving of the healthy garden salad
  • GNU peanut butter fiber bar
  • 1/2 veggie patty wrap
  • tater tots

1st day madness!

Today was my first day of teaching on the new job–it was crazy busy!  But, I still managed to eat. 😉

I started with a protein shake (unpictured), then a healthy garden salad (unpictured), and some carrots and guacamole (unpictured).

Then I actually had a breather and got some celebratory dessert when I got home!

It’s an ANZAC cookie/biscuit from my fave local vegan bakery (The Drunken Monkey)

Dinner was a mix of lettuce, black bean burger patty, salsa, and grape tomatoes.  Yum!

Later I snacked on some lightly salted Snapea Crisps that were pretty tasty, too!

Out n about all weekend

Saturday and Sunday were filled with LOTS of errands and of course…eating!  We were furniture window shopping, grabbing a few things to spruce up my work office, had a couple trips to the supermarket, and we met with a mortgage broker somewhere in there.

We went to the Sweet Tomatoes buffet for lunch Saturday, and here’s a peek at just some of the many plates of food I consumed:

Later that night, we hit up happy hour at a local bar where I consumed two Bud Light drafts and 2 potato skins–yum!

Today we started out with lunch at Chipotle.

And now I’m ready to unwind a bit before I have my FIRST day of teaching (ahem…going over the syllabus) tomorrow–woohoo!

Food i 8 today;

  • Chipotle salad bowl –> lettuce, black beans, fajita veggies, pico de gallo, guacamole
  • VegeFi burger –> quinoa burger patty, lettuce, tomato, pickles, and ketchup on a multigrain bun
  • feeling a little hungry…maybe a bowl of Vanilla gluten-free Chex cereal soon?

Qdoba + a happy hour

The crazy days just keep coming!  I didn’t get around to breakfast again (bad BAD), but went to lunch with some colleagues at the student union/food court.  I went with a black bean and veggie salad from Qdoba–add the guac please.  Yum!

I went to an unexpected, fun happy hour around 5pm, and was STARVING by the time I got home.

I snacked on some carrots and hummus and then ate some leftovers (sweet potatoes and corn) from a BBQ outing last weekend.

That’s about it!

  • Qdoba salad (black beans, lettuce, roasted veggie mix, salsa verde, pico de gallo, guacamole)
  • apple pie Larabar
  • draft Miller Lite beer
  • carrots + hummus
  • leftover sweet potatoes and corn

Friday eats

I’ve been maaaajorly slacking in the food photography arena.  Bad blogger!  But, I’m ready to get back on track.  Life should be returning to “normal” fairly soon.  I need to sit down and think about how the blog is going to fit into life with the new, “busier” job of mine!

For now, the list of the food i 8 today will just have to suffice:

  • Qdoba veggie salad –> romaine lettuce, roasted veggies, fajita veggies, pico, salsa verde + coke zero
  • apple pie Larabar
  • 1 banana + 2 TBSP natural peanut butter
  • Bahama Breeze dinner –> 1 Miller Light draft beer, 1/2 a roasted veggie sandwich, side tomato salad
  • Dairy Queen vanilla soft serve cone with sprinkles

I am going to make a better effort to take food photos starting this weekend!

Today we woke up, ran some errands, and fueled for an afternoon of house hunting.

Yep, we were at 4Rivers Smokehouse again!  I went with the banana bread pudding, sweet potatoes, and a biscuit.  True to form, I ate half of each.  🙂

After FIVE hours of looking at homes, we were so so ready for dinner.  We checked out a place called TooJay’s Deli.  It’s a  NY-style delicatessen, which I love.  We split a potato knish to start and then I dug into those huge roasted vegetable salad.

Later in the evening I munched on some David’s cookies, then called it a night!

  • BBQ sides –> 1/2 of each:  biscuit, sweet potatoes, banana bread pudding
  • dinner –> 1/2 a potato knish, roasted vegetable salad, some of my husband’s sweet potato fries
  • David’s cookies!

Today I got back on track with my eating…for the most part.  😉

I started out with 1/2 a cucumber and some guacamole.

I’m babysitting my three nieces this week at my parents’ place, so we spent the afternoon at the park.  I snacked on some animal crackers while I was there, then we headed home for dinner.

Betty Crocker came out with a “s’mores cupcake ” mix.  It was AWESOME!  You start with a layer of graham cracker, followed by some cupcake batter, a little bit of marshmallow, and even more batter to top it off.  I decided to enjoy mine without the frosting, and it was still super decadent.  Delish!

I’m back from a glorious 3 weeks of post-dissertation defense F-U-N!!!  Okie, here are my 3 updates:

(1) My Trip

…was amazing!  I RV’d up to NJ (stopped at my uncle’s in Georgia and our friend’s in Virgina along the way) with my parents and three nieces.  We stayed about a week and a half in NJ at my other uncle and grandfather’s.  While we were there, we visited family, spent quality time with my grandfather, went hiking, saw Monsters University, went swimming, played games, ate a whole lotta delicious food, took many walks, spent two days being “tourists” in NYC, got our nails done, etc. etc.  It was great for me to get away from work/school for a bit and just enjoy spending time with my family.  Great times!

(2) My Weight

While on vacation, I did not step on a scale, count a calorie, or worry too much about any of that.  My family is big on eating.  We planned our days around meals, and each dinner was followed by dessert–no exceptions.  Usually there were 2+ dessert options, too!  On the fitness side, I committed to at least one long walk each day.  Some days there were two walks, some days it was a full day of walking, and I did squeeze in a few bike rides as well.  The day I left for my trip, I weighed in at 131.6 pounds, and today I weighed in at 134.4.  So, I gained about one pound per week, for a total of 3 pounds.  I’m not exactly thrilled by this news, but it’s not exactly shocking either.  I ate waaaay out of my normal calorie range many days, but I sure did have fun doing it!

(3) My Toe

So last Wednesday I did something stupid.  I accidentally walked right into a rocking chair at my parents’ house, slammed my left pinky toe super hard, and subsequently got an xray and found out that I broke it.  (NOTE:  I did the same exact thing roughly one year ago to my other, right-side pinky toe–doh!!).  Anyway, this means I will NOT be getting right back into my fitness routine, like I had hoped.  I am walking around in a medical boot for at least three weeks, at which time I’ll assess whether I can go back to running/aerobics.  This is a bit depressing, considering I have those 3 vacation pounds I’d like to drop ASAP, but I will have to just work extra hard on the diet front.

I think my plan of action is to get my eating right this week and then weigh in again next weekend.  I hope to see a loss on the scale between now and next week!

This morning I woke up, worked up a sweat on the elliptical for 30 mins, then headed out to pick up brunch and drive to campus.

Although the pic doesn’t make it look too appetizing, I thoroughly enjoyed this veggie omelette, fresh fruit, and english muffin–all for under 500 calories!

I taught my class, did some work on campus, ran a couple errands, then picked up dinner at the nearby Publix Deli,

The salad was delish.  I only had two bites of the black eyed pea mix before determining I just didn’t like it.  It had a trace of an “olive-y” taste, and I dislike olives, so the other salad served as my dinner!

Food i 8 today:

  • Village Inn –> veggie omelette, english muffin, fresh fruit
  • Publix Deli –> salad with lettuce, candied pecans, cranberries, apples, and bleu cheese (which I picked around); a couple bites of a black-eyed peas salad

I broke 130 lbs today!  woohoo!  Then I proceeded to eat everything in sight.  Well, not exactly.  But watching what I eat so much the past few days did make me quite ravenous today.

First up, I downed a Lara Bar before heading to the gym.

Then on my way to campus, I stopped at our local vegan joint and picked up a DELICIOUS tempeh and veggies salad.

I told myself I would eat half of it before class and the rest after…but I wolfed down the entire thing in one sitting.  Yep!

When I got home after being on campus, I ate some “beanito” chips (black bean chips) with hummus as well as a few bites of almond butter.

Then it was off to dinner with some friends at an Asian place.  I got a half order of vegetable brown fried rice and an avocado roll.  I ate almost all of that, too.

Then I came home and had a little more almond butter and called it a night!  I’m sure the scale will be back in the 130s tomorrow, but it was exciting to see 129 again, at least for one day!  🙂

  • peanut butter cookie Lara bar
  • vegan salad –> stir-fry of tempeh, carrots, squash, beets, cabbage, zucchini, onions, and ginger sauce served over a bed of lettuce
  • 7 beanito chips + 1 TBSP Sabra red roasted pepper hummus

  • 1/2 order of vegetable brown fried rice + avocado roll
  • few more bites of almond butter
