Friday weigh-in #5

I was at 131.2 Friday morning.  Not too shabby.

Today I went antiquing with my mom and her friend all morning.  It was actually kind of neat to check out all the goodies that were out there!  We ate lunch at a cute sandwich shop while we were out.

From there, my mom and I continued to run errands and shop around for my sister’s upcoming baby shower.  But enough about me, onto the FOOD!

Friday weigh-in #4

This morning’s weight:  132.8

My other most recent weigh-ins:  134.2 (8/8), 132 (8/2), 131.8 (7/26), 133 (7/19),  134.4 (7/13)

Seeing this pattern leads me to believe that really, my weight is around 135.  With a “happy weight” of 130 and a goal weight of 125, I think I have 5 pounds to lose!  🙂

The good thing is that 4 weeks of rest for my broken pinky toe ended this week.  I’m going to TRY to get back in the gym.  I really hope the pinky toe is all good now!

I’m back from a glorious 3 weeks of post-dissertation defense F-U-N!!!  Okie, here are my 3 updates:

(1) My Trip

…was amazing!  I RV’d up to NJ (stopped at my uncle’s in Georgia and our friend’s in Virgina along the way) with my parents and three nieces.  We stayed about a week and a half in NJ at my other uncle and grandfather’s.  While we were there, we visited family, spent quality time with my grandfather, went hiking, saw Monsters University, went swimming, played games, ate a whole lotta delicious food, took many walks, spent two days being “tourists” in NYC, got our nails done, etc. etc.  It was great for me to get away from work/school for a bit and just enjoy spending time with my family.  Great times!

(2) My Weight

While on vacation, I did not step on a scale, count a calorie, or worry too much about any of that.  My family is big on eating.  We planned our days around meals, and each dinner was followed by dessert–no exceptions.  Usually there were 2+ dessert options, too!  On the fitness side, I committed to at least one long walk each day.  Some days there were two walks, some days it was a full day of walking, and I did squeeze in a few bike rides as well.  The day I left for my trip, I weighed in at 131.6 pounds, and today I weighed in at 134.4.  So, I gained about one pound per week, for a total of 3 pounds.  I’m not exactly thrilled by this news, but it’s not exactly shocking either.  I ate waaaay out of my normal calorie range many days, but I sure did have fun doing it!

(3) My Toe

So last Wednesday I did something stupid.  I accidentally walked right into a rocking chair at my parents’ house, slammed my left pinky toe super hard, and subsequently got an xray and found out that I broke it.  (NOTE:  I did the same exact thing roughly one year ago to my other, right-side pinky toe–doh!!).  Anyway, this means I will NOT be getting right back into my fitness routine, like I had hoped.  I am walking around in a medical boot for at least three weeks, at which time I’ll assess whether I can go back to running/aerobics.  This is a bit depressing, considering I have those 3 vacation pounds I’d like to drop ASAP, but I will have to just work extra hard on the diet front.

I think my plan of action is to get my eating right this week and then weigh in again next weekend.  I hope to see a loss on the scale between now and next week!

I started today with an invigorating spin class.  Afterward, I came home, showered, wolfed down a Lara Bar, then headed to campus.


After teaching and a little bit of work I had a hankerin’ for some Chipotle.   I LOVE their salad bowl!



After a few more hours of work on campus, dinner was next on the agenda.  I stopped at Earth Fare (local health food supermarket) to see what their deli had to offer.   Here’s what I went with:



kale salad, sweet Korean tofu, brussels sprouts

I felt each dish was “eh”.  Maybe the seasoning on the tofu made it a little more desirable than the other two items I purchased.  Anyway, the food that REALLY stole the show was this delicious sweet potato caramelized onion cake!



I know it sounds a little weird, but boy was it tasty!  It was almost like a dessert, which means it probably wasn’t all that healthy, but I would definitely buy one of these again.

Last but not least, I had a few bites of some creamy almond butter.  That wraps up today’s eats!

  • Chipotle salad –> romaine lettuce, black beans, fajita vegetables, pico, guacamole
  • 0.35 lb. of “live dark green salad” (vegan) –> kale, red pepper, yellow pepper, squash, zucchini, broccoli, cauliflower, tomato, carrot, celery, cider vinegar, sunflower seeds, EVOO, canola oil, agave nectar, salt, hemp seed
  • 0.13 lb. of roasted brussels sprouts with garlic
  • 0.17 lb 0f sweet Korean kim chi marinated tofu
  • sweet potato caramelized onion cake
  • few bites of MaraNatha creamy almond butter

I’m baaaaack!  I had an AMAZING 5 days at the country music festival with my family.  Unfortunately, the weather was not ideal for camping (LOTS of rain), but we made the best of it.  My family got nice and cozy inside the RV with some movie watching, cooking, drinking, card playing, reading, and just hanging out chatting.  We still ended up having a very memorable vacation.

How were my eating habits while I was gone?  Not too shabby!  I had a couple drunken nights, which lead to way too many beers, cheese and wheat thins, fresh baked cookies, and ummm maybe some fried pickles and french fries during one of the shows.  So yes, I did indulge here and there.  I also balanced out the bad with lots of raw and cooked veggies, hummus, guacamole, eggplant, etc.  I returned from vacation at a weight of 131.2, and I’m ok with that.  I got back on track today!


I started out with some roasted veggies (sweet potatoes, red potatoes, zucchini, onions, carrots) leftover from our camping adventure.

Shortly after, I had a craving for my delicious protein smoothie!



We went out for dinner tonight at a place in downtown Orlando called Harry Buffalo.  We started with the server-recommended cheesy bread.



It was SO GOOD!  And thank goodness because my meal was not so great…



I had great hopes for this dish–a tofu bowl filled with brown rice, Asian veggies, cashews, tofu, and peanut sauce.  Unfortunately, it just wasn’t that great.  The tofu tasted like it was straight out of the package, and the sauce was just ok.  I ate a little less than half.  boooooo

I ended the meal with far too many bites of my husband’s french fries!   🙂

Today started with a late wake-up and a protein shake.



It was a dark, rainy day, so we drove around some neighborhoods in Orlando and then headed to Ikea for a bit.  We had an early dinner at a place that considers themselves “Pan-Asian.”  We started with some garlic edamame.



I also split these veggie spring rolls with the hubs.



I went with a brown rice tofu roll for my meal.  It actually was a little disappointing, unfortunately.



Thankfully, we stopped by a frozen yogurt joint on the way home!

I got up bright and early this morning to drive allll the way home to my apartment.  It feels good to be back at home for a bit!

I had to quickly shower and get ready for a meeting on campus, so I whipped up a sandwich before I headed out the door.  Now, I haven’t had a PB&J sandwich in FOREVER and totally wanted one today, but all I had was sunflower seed butter, so I made and SB&J instead!



Mmmmm, delish!  After my meeting and hanging out with some friends in the office, I stopped at EarthFare on the way home to hit up their hot bar.



The top left is a ratatouille that was amaze, the bottom left thing is tofu + veggies, and to the right I just threw together some beans, peas, and artichoke hearts.  It was all quite tasty!

Of course, I also had to pick up a vegan cookie for dessert!



Later in the evening, I went to a couple of softball games–one for the college team and one for my friend’s intramural team.  Both of my teams lost, unfortunately, but it was fun hanging out with my friends since I’ve been away for some time.  We went for some post-game drinks and food around 10pm.

I ended up just sipping on water and splitting a salad and flatbread with one of my girlfriends.  No pics, sorry.

The scale has been creeeeeping up lately, as I’ve been out of town and just livin’ it up!  I actually have more fun plans coming up this month, so I’m not sure how much I’m going to be able to make wiser food choices just yet, but I definitely don’t want to see things get out of control!  In other words, I’ll try to be better…

This morning I felt sooooo gross!  My stomach was aching so badly that it actually woke me up around 3am.  I’m not sure if I ate something bad or just ate SO SO badly, but my belly was not happy with me.

Anyway, I skipped breakfast because I had zero appetite and headed to a 12pm pedicure appointment.  Ahhh, it felt nice to get that done!

Then we had one more friend to meet up with for the weekend, and of course…it was a lunch date!  We went to a place called BJ’s Brewhouse, which is known for their Chicago style deep dish pizza.  So, when in Rome…


I went with a mini veggie pizza on a whole wheat crust.  Yum!  I sooooo wanted to get their famous Pizookie (a deep dish pizza cookie topped with ice cream), but I thought, that sounds very caloric, lemme look into that.  After a little iPhone searching, I discovered the dessert alone has 1100 calories!!!  I was dining with two guys, so I knew they’d have like one bite each, and I’d end up eating 900 calories worth of cookie and ice cream.  So, I got some fro-yo instead.  🙂


We walked around a shopping center for a while and then hit the road to Orlando to visit some more family.  We grabbed dinner at Pei-Wei.


I went with the Mongolian veggies and tofu combo, which comes with brown rice and a veggie spring roll.  I ate the spring roll, but opted for no rice.

As much as I SO wanted a vegan dessert tonight, I refrained and had a couple spoonfuls of almond butter instead.  That’s about it folks!

Easter Feaster

Sometimes my husband and I get together and we’re bad.  Real bad.  Meaning, we throw all caution to the wind and just eat our hearts out.  Today was one of those days.  We were major “Easter Feasters”.  Here’s a recap:



A delicious vegan brunch (my plate + my husband’s).  Mine was scrambled tofu, beans, salsa, corn tortillas, brown rice.  Yum!



I had ONE of these vegan “everything” cookies.



We had an early dinner at an Asian joint.  I had a 1/2 order of brown vegetable fried rice and half of a mushroom veggie sushi roll.  



We had a late night food craving, so we stopped at Steak and Shake, and I ate the above dessert.  By myself.  I pushed the whipped cream and cherry and fudge to the side, but I definitely ate BOTH cookies and the ice cream.  It gets better…



…then we went to Walmart and THEN we went to Applebee’s for some late late night eats.  I had about 1/2 a basket of fries.

And then I called it quits.  So, we didn’t exactly have a big family feast today, but we still managed to stuff ourselves silly.

  • brunch –> 2 corn tortillas, scrambled tofu, brown rice, beans, and salsa

  • 1/2 order of vegetable fried rice (with brown rice)

I started my day with Ezekiel toast + hummus.

Lunch was a work one.  We went to Chili’s, and I had my usual:  black bean burger patty, salsa, broccoli.

Then I had a little slice of Publix cake at work–whoops!  Then I had some chips and spinach dip at a work happy hour. Ugh–didn’t need those.

So I stopped by EarthFare (health food supermarket) on the way home to hit up their hot bar.  Unfortunately, the options were “ehh”, but I didn’t feel like going anywhere else.  On the upside, I tried brussel sprouts for the first time in my life, and I enjoyed the taste!  The thai tofu (top left) was not great, so I didn’t finish it, but the soy chick’n and mushroom (top right) was spot on, and of course, you can’t mess up green bean casserole–delish.

Last, I actually switched up my “healthy dessert” tonight!  Don’t get too excited, it’s not that big of a change.  All I did was take out the almond butter from my evening overnight oatmeal and subbed in a spoonful from this gem:


Ok so maybe one spoonful was a little tooooo much choclately flavor, if you can believe it.  Next time I’ll add just under a tablespoon.


The end result was still a yummy mix of chocolate and banana oatmeal.  Definitely a satisfying, healthy dessert that I will add into the mix!
